Design must also work (most probably with less details) in Two-Tone (I guess that's how you say just two colours) . This does not mean that the design is limited to two colours - rather that there would be two versions:
I am not sure how you graphically represent gold but I imagine a yellow/orange/goldy colour would do. A Golden/yellow and black would look very strong - A yellow based gold would be good because we could use normal bright yellow paper to watch the logo.
I am begging to think that some kind of bright-yellow would be the way to go, that is possible to print and get paper, T-Shirts for, rather than a 'Gold' that would be horribly expensive to render.
I would prefer an abstract logo, that works well in Two-Tone and is graphically very strong. so a strong silhouette / outline design would be important.
My initial vision was a bull (Toro) neck and head and horns proudly sticking through a ring - but I leave it to you guys - you all are the visual experts!
It Will be targeted at older people (45 - 70) mostly men, English speaking - working, middle class and educated professionals, mostly in USA and Anglophiles globally.
Must have version with and without domain name.
